Easy Apple Cake

Easy Apple Cake recipe — moist, full of apple flavor, and perfect for everyday baking! 🍎✨

 Ingredients (Serves 8)

  • 1 ½ cups (190 g) all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon (optional: pinch of nutmeg)

  • ½ cup (115 g) butter, softened

  • ¾ cup (150 g) sugar (or ½ cup brown + ¼ cup white for richer flavor)

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup (120 ml) buttermilk or plain yogurt

  • 2 medium apples, peeled, cored, diced (about 2 cups)

 Directions

  1. Preheat & Prep

    • Heat oven to 175 °C / 350 °F.

    • Grease and line an 8-inch (20 cm) round or square pan.

  2. Mix Dry Ingredients

    • Whisk flour, baking powder, baking soda, salt, and cinnamon.

  3. Cream Butter & Sugar

    • Beat butter and sugar until light and fluffy.

    • Add eggs one at a time, then vanilla.

  4. Combine

    • Mix in half the dry ingredients, then buttermilk, then remaining dry ingredients.

    • Fold in diced apples.

  5. Bake

    • Spread batter in pan.

    • Bake 35–40 min, or until a toothpick in the center comes out clean.

  6. Cool & Serve

    • Let cool slightly, then dust with powdered sugar or drizzle with a simple glaze.

Variations

  • Add ½ cup chopped walnuts or pecans.

  • Swap cinnamon for apple pie spice.

  • Top with a streusel before baking for extra crunch.
