Ingredients (Serves 8)

1 ½ cups (190 g) all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp cinnamon (optional: pinch of nutmeg)

½ cup (115 g) butter, softened

¾ cup (150 g) sugar (or ½ cup brown + ¼ cup white for richer flavor)

2 large eggs

1 tsp vanilla extract

½ cup (120 ml) buttermilk or plain yogurt

2 medium apples, peeled, cored, diced (about 2 cups)

Preheat & Prep

Heat oven to 175 °C / 350 °F.

Grease and line an 8-inch (20 cm) round or square pan.

Mix Dry Ingredients

Whisk flour, baking powder, baking soda, salt, and cinnamon.

Cream Butter & Sugar

Beat butter and sugar until light and fluffy.
