 Mashed Potatoes (Serves 4–6)
Ingredients

2 lb (900 g) potatoes (Yukon Gold or Russets work best)

4 Tbsp butter
-
½ cup (120 ml) warm milk or cream (adjust for texture)

Salt & pepper, to taste
Directions

Peel (optional) and cut potatoes into chunks.

Boil in salted water until very tender (15–20 min).

Drain well; mash with butter.

Add warm milk/cream a little at a time until smooth and fluffy.

Season with salt & pepper.
Classic Brown Gravy
Ingredients

2 Tbsp butter (or meat drippings for extra flavor)

2 Tbsp all-purpose flour
-
2 cups beef, chicken, or vegetable stock

Salt & pepper, to taste

(Optional) ½ tsp Worcestershire or soy sauce for depth
Directions

In a saucepan, melt butter over medium heat.

Whisk in flour; cook 1–2 min until golden (this is your roux).

Slowly whisk in stock, stirring constantly until smooth.

Simmer 3–5 min until thickened.

Taste and season.
 Tips & Variations

For garlic mashed potatoes, add 2 cloves of roasted or sautéed garlic when mashing.

For extra creaminess, mix in a little sour cream or cream cheese.

Make onion or mushroom gravy by sautéing sliced onions/mushrooms before adding flour.
