Green Peas with Crisp Onions & Bacon
Ingredients (4 servings)

3 cups fresh or frozen green peas

4–5 strips streaky bacon, diced

1 medium onion, thinly sliced (or 1 cup crispy fried onions)

1 Tbsp butter or olive oil

Salt & freshly ground black pepper

Optional: a squeeze of lemon or a sprinkle of chopped parsley

Cook bacon

Place bacon pieces in a large skillet over medium heat.

Cook until golden and crispy. Remove with a slotted spoon and set aside.

Cook onions

If using fresh onions, sauté them in the bacon drippings (or add a bit of butter) until caramelised and slightly crisp on the edges.

If using packaged crispy onions, skip cooking and add them at the end.

Add peas

Pour peas into the skillet, stir to coat in the fat.
