Ingredients (Serves 4–6)

1 lb (450 g) ground beef (80/20)

½ lb (225 g) ground pork (optional, for depth)

½ lb (225 g) diced chuck steak or brisket (bite-size)

4 strips bacon, chopped

2 cups beef stock or bone broth

2 Tbsp tomato paste (optional — skip for strict carnivore)

2 tsp smoked paprika

1 tsp chili powder (or more if you like heat)

1 tsp garlic powder

1 tsp onion powder

Salt & black pepper, to taste

½ cup shredded cheese (optional garnish)

Sour cream or pork rinds (optional topping)
Directions

Cook bacon

In a heavy pot or Dutch oven over medium heat, cook bacon until crispy. Remove and set aside.

Brown meats

In the same pot, brown ground beef and pork until no longer pink.

Add diced chuck/brisket; sear for a few minutes.

Stir in paprika, chili powder, garlic & onion powders, salt, and pepper.

Add beef stock (and tomato paste if using).

Bring to a gentle simmer, cover, and cook on low 45–60 min, stirring occasionally, until the chuck is tender and flavors meld.
