Air Fryer Meringue

Making meringue in an air fryer is totally doable β€” and surprisingly effective β€” as long as you control the temperature and airflow, since meringue is delicate and cooks best low and slow.

Here’s how to make crispy, airy Air Fryer Meringues:


🍬 Air Fryer Meringue Cookies

πŸ₯š Ingredients:

  • 2 large egg whites (room temperature)

  • 1/2 cup (100g) granulated sugar

  • 1/4 tsp cream of tartar (or a few drops of lemon juice)

  • 1/2 tsp vanilla extract (optional)

  • Use silicone mat or parchment with holes poked in it (to prevent flying around).

  • If your air fryer fan is strong, meringues may blow around β€” try using a baking rack or ramekins to weigh down edges.

1. Make the Meringue

  1. In a clean, dry bowl, beat egg whites until foamy.

  2. Add cream of tartar.

  3. Slowly add sugar, 1 tablespoon at a time, while beating.

  4. Beat until stiff peaks form and mixture is glossy.

  5. Fold in vanilla extract if using.

2. Pipe or Spoon

  • Spoon or pipe small mounds or rosettes onto a lined air fryer tray or parchment round with holes.

  • Keep them small (about 1–1.5 inch wide) for even cooking.

3. Air Fry

  • Set air fryer to 90–100Β°C (195–210Β°F) β€” very low temp is key.

  • Cook for 30–45 minutes, depending on size.

  • Turn off air fryer and let meringues sit inside for another 30–60 minutes to fully dry out.

  • Don’t open the air fryer mid-cook β€” steam can make them collapse.

  • If your air fryer can’t go below 100Β°C (212Β°F), prop the door open slightly with a spoon to lower the heat.

  • Store in an airtight container β€” humidity will make them sticky.

  • Add a drop of food coloring before piping

  • Mix in a bit of cocoa powder for chocolate meringues

  • Sprinkle with crushed freeze-dried berries
