Garlic Chicken Fried Rice
Ingredients:
- 2 cups cooked rice (preferably day-old)
- 1 lb (450g) chicken breast or thighs, diced
- 6–8 garlic cloves, minced
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 3 tablespoons soy sauce (or to taste)
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon sesame oil (optional)
- 2 tablespoons vegetable oil (for frying)
- 2–3 green onions, chopped
- Salt and pepper, to taste
Instructions:
- Prepare the Chicken:
Season the diced chicken with a bit of salt and pepper. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat. Add the chicken and cook until browned and fully cooked, about 5–7 minutes. Remove and set aside. - Sauté Garlic:
In the same pan, add another tablespoon of oil if needed. Add the minced garlic and sauté until fragrant and slightly golden, about 1–2 minutes. Be careful not to burn the garlic. - Cook the Eggs:
