Aflatoon Recipe
Ingredients:
- 1 cup semolina (sooji)
- 1 cup all-purpose flour (maida)
- 1 cup powdered sugar
- 1 cup ghee (clarified butter)
- 1 cup milk
- ½ cup grated coconut
- ¼ cup mixed nuts (almonds, cashews, pistachios), chopped
- 1 teaspoon cardamom powder
- ¼ teaspoon saffron strands (optional)
- 2 tablespoons of milk (for soaking saffron)
Instructions:
- Prep the saffron: Soak the saffron strands in 2 tablespoons of warm milk and set aside.
- Roast the semolina: In a large non-stick pan, heat ½ cup of ghee over medium heat. Add the semolina and roast until it turns light golden and gives off a nutty aroma (about 7-8 minutes). Stir continuously to prevent burning.
- Roast the flour: Add the all-purpose flour to the same pan and roast for another 4-5 minutes until it turns light brown.
- Add the coconut: Stir in the grated coconut and roast for another 2-3 minutes. The mixture should become aromatic.
- Add the milk and saffron: Lower the heat and gradually add the milk (including the saffron-soaked milk), stirring constantly. Cook the mixture until the milk is absorbed.
- Add sugar and ghee: Add the powdered sugar, the remaining ½ cup of ghee, and mix well. Keep stirring until the mixture thickens and starts to pull away from the sides of the pan.
- Add nuts and cardamom: Stir in the chopped nuts and cardamom powder. Cook for another 2-3 minutes, making sure the mixture is smooth and combined.
- Set the mixture: Grease a tray or plate with ghee. Pour the mixture onto the tray and press it down evenly using a spatula or the back of a spoon.
- Cool and cut: Let it cool completely, then cut into squares or diamond shapes.
