Ingredients:
- 4 medium-sized potatoes (Yukon Gold or Russet)
- 3 tablespoons olive oil or melted butter
- 1 teaspoon kosher salt

- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika (optional)
- 1/2 cup shredded cheddar cheese (or your favorite cheese)
- 2 tablespoons grated Parmesan cheese

Instructions:
- Prepare the Potatoes:
- Wash and dry the potatoes thoroughly.
- Place a potato between two wooden spoons or chopsticks to help guide your cuts and prevent slicing all the way through.
- Using a sharp knife, make thin, even slices across the potato, about 1/8 inch apart, stopping just before you cut through, so the potato stays intact.
- Season the Potatoes:
- In a small bowl, mix together the olive oil (or melted butter), salt, pepper, garlic powder, onion powder, and paprika.
- Brush the seasoned oil mixture generously over each potato, making sure to get some into the slices.
- Air Fry the Potatoes:
- Preheat your air fryer to 350°F (175°C) for about 3 minutes.
- Place the potatoes in the air fryer basket, making sure they’re not overlapping.
- Air fry the potatoes for 20-25 minutes, depending on their size, until they are crispy on the outside and tender on the inside. Check them halfway through and brush with any remaining oil mixture if needed.
- Add the Cheese:
- Once the potatoes are almost done, carefully remove the basket and sprinkle the shredded cheddar cheese and Parmesan cheese over the potatoes, making sure some cheese gets into the slices.
- Return the basket to the air fryer and cook for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve:
- Remove the potatoes from the air fryer and let them cool slightly.
- Garnish with fresh chives or parsley if desired.
- Serve with a side of sour cream or your favorite dipping sauce.
