Carnivore Chili recipe

Here’s a hearty Carnivore Chili — packed with rich, meaty flavor, no beans or veggies, just layers of seasoned meat and broth. 🥩🌶️🍲

Ingredients (Serves 4–6)

  • 1 lb (450 g) ground beef (80/20)

  • ½ lb (225 g) ground pork (optional, for depth)

  • ½ lb (225 g) diced chuck steak or brisket (bite-size)

  • 4 strips bacon, chopped

  • 2 cups beef stock or bone broth

  • 2 Tbsp tomato paste (optional — skip for strict carnivore)

  • 2 tsp smoked paprika

  • 1 tsp chili powder (or more if you like heat)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt & black pepper, to taste

  • ½ cup shredded cheese (optional garnish)

  • Sour cream or pork rinds (optional topping)

 Directions

  1. Cook bacon

    • In a heavy pot or Dutch oven over medium heat, cook bacon until crispy. Remove and set aside.

  2. Brown meats

    • In the same pot, brown ground beef and pork until no longer pink.

    • Add diced chuck/brisket; sear for a few minutes.

  3. Season

    • Stir in paprika, chili powder, garlic & onion powders, salt, and pepper.

  4. Simmer

    • Add beef stock (and tomato paste if using).

    • Bring to a gentle simmer, cover, and cook on low 45–60 min, stirring occasionally, until the chuck is tender and flavors meld.

  5. Finish & Serve

    • Stir bacon back in. Taste and adjust seasoning.

    • Ladle into bowls and top with cheese, sour cream, or pork rinds if desired.

Tips & Variations

  • For extra richness, add 2 Tbsp beef tallow or butter while simmering.

  • Swap pork for spicy chorizo or Italian sausage for a kick.

  • To make it ultra-smooth, blend part of the cooked chili, then stir it back in.
