Taco Bell Beefy Melt Burrito

Hereโ€™s a homemade recipe for the Taco Bell-style Beefy Melt Burrito, inspired by its original ingredients. This version recreates the taste and texture pretty closely.


๐ŸŒฏ Homemade Beefy Melt Burrito (Taco Bell Style)

๐Ÿ“ Ingredients (makes 2 burritos)

For the beef:

  • 1/2 lb ground beef

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt & pepper to taste

  • 2 tbsp water (to mix with spices)

Other components:

  • 1 cup cooked seasoned rice (see note below)

  • 1/4 cup nacho cheese sauce (store-bought or homemade)

  • 1/2 cup shredded three-cheese blend (cheddar, mozzarella, Monterey Jack)

  • 1/4 cup sour cream

  • 1/4 cup crunchy tortilla strips (store-bought or crushed tortilla chips)

  • 2 large flour tortillas (10โ€“12 inch)


๐Ÿš Optional โ€“ Seasoned Rice Recipe

Cook 1 cup of white rice, then stir in:

  • 1 tbsp butter

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • Dash of paprika and lime juice

  1. Cook the beef:

    • Brown the ground beef in a skillet over medium heat.

    • Drain excess grease.

    • Mix spices and water in a small bowl; pour over beef.

    • Stir and simmer for a few minutes until thickened and well-coated.

  2. Warm up components:

    • Heat the nacho cheese sauce.

    • Warm tortillas in a pan or microwave until soft and pliable.

  3. Assemble the burritos:

    • In the center of each tortilla, layer in this order:

      1. 1/2 cup seasoned rice

      2. 1/4 cup beef

      3. 2 tbsp nacho cheese sauce

      4. 2 tbsp shredded cheese

      5. 2 tbsp sour cream

      6. 2 tbsp tortilla strips or crushed chips

  4. Fold and wrap:

    • Fold in the sides, then roll tightly from bottom to top like a classic burrito.

    • Optional: toast the burrito seam-side down in a dry skillet for 1โ€“2 minutes for a crispy finish.

  • Spicier: Add jalapeรฑos or use spicy nacho cheese.

  • Vegetarian: Swap beef with black beans or plant-based ground “meat.”

  • Extra cheesy: Add a little shredded cheese inside and melt it in the pan after wrapping.
